Fresh Summer Salad

Nothing beats a cool, refreshing salad. And if you add avocado it can be plenty filling.

Directions

  1. Seasonal greens, chopped into bite-size pieces
  2. 1/2 cucumber
  3. Bunch of sliced radishes
  4. 1/2 cup of chopped bell pepper
  5. Cooked Brown rice
  6. 1 sliced avocado
  7. Lemon juice
  8. Balsamic vinegar (optional)

Directions

  1. Prepare all ingredients in a salad bowl
  2. Serve with some rice crackers
  3. Drizzle with lemon juice or balsamic vinegar
