About The Plant-Based Diet

The Plant-Based Diet is your resource for delicious and nutritious plant-based recipes, exercises, and healthy living for your mind, body, soul, and the planet.

We feature mostly plant-based recipes mostly that I discover or create. In our recipes, we strive to use organic, non-GMO, whole-food, mostly plant-based ingredients.

We also work to promote community gardens and recipes that come from the people who work to grow healthy, organic produce for their communities.

Community gardens are the key to ending hunger and malnutrition. By bringing together a community and involving them in a democratic process of growing their own foods, we create not only camaraderie but also the ability to feed all socioeconomic levels as well as educate everyone about where and how food is the best medicine.

To me, it’s a diet that is rich in whole-foods from healthy plant-based sources. But, it’s plant-based NOT (necessarily) plant-exclusive, and it’s a lifestyle that nurtures your mind, body, and the planet.

I emphasize this because there are lots of vegan and vegetarian websites and magazines, but I wanted this website to help those in the middle ground–the people who want to clean up their diet, go greener (more plant-based) but maybe aren’t going to entirely cut out meat and dairy products.

I get it! Each of us is unique and has different dietary needs. While some general rules apply, not all can follow a strict diet that eliminates all meat and dairy products.

So I would agree with what author Michael Pollan likes to say, “Eat food, not too much, mostly plants.”

I would add, “Exercise daily, say good things to yourself, and treat the planet well.”

That is the essence of this website. To help you live a happy, healthy, (mostly) plant-based lifestyle.

I founded The Plant-Based Diet after taking courses through the T. Colin Campbell Foundation on Whole-Food, Plant-Based Nutrition. It opened my eyes to how much damage we do to our bodies daily by what we eat. For the most part, many live to eat instead of eat to live.

Life Before The Plant-Based Diet

I know the reality of not living this way from a tragic personal experience and my own health.

My Thai father, Serm, passed away in 2002 from prostate cancer; this crushed me. He was everything to me and he was only 72-years old, barely retired. We don’t have to die the way my father did–in pain, on tons of medication, and with a disease viciously stripping his body of any nutrients.

This great loss deepened my thirst to explore “dis-ease”, the causes and the cures.

I searched for the healthiest diet and lifestyles using myself as the “test study.”

I was suffering from acid reflux and terrible digestion. I was not absorbing my food. I later learned this was tied to a gluten (gliadin) and casein allergy. WebMD defines it this way: “A casein allergy occurs when your body’s immune system mistakenly thinks the protein is harmful and inappropriately produces allergic (IgE) antibodies for protection.”

Both gluten and casein cause my body to produce inappropriate antibodies. The consumption of these foods can do long-term damage and cause auto-immune diseases. Read more here.

From the expert knowledge I received and researched, I healed myself, naturally–without the use of Western medication–of several digestive ailments and “dis-eases” that I was diagnosed with more than a decade ago. Through the adoption of eating a healthy, clean diet based mostly on whole foods and plant-based meals and drinks that are low in acidity and high in water content, I became symptom-free. No more acid reflux.

I believe there is one diet (really I mean lifestyle) that allows us to nourish our bodies rather than deplete them. The Plant-Based Diet actually builds a healthier, stronger body.

I started this blog with the aim of helping others achieve a healthier lifestyle. For many years, I was a hula dancer, a fitness enthusiast, and an early morning anchor for 10News in San Diego. I appeared fit from the outside, but I didn’t pay much attention to what I was consuming. I ate unhealthy food but exercised rigorously. I monitored my carbohydrate and fat intake, but I consumed a significant amount of animal protein. I also relied heavily on protein shakes, sometimes skipping whole foods. Today, I believe that true healthiness comes from a balacne of living fit from the inside out. Healthy eating alone isn’t sufficient. So, as a certified yoga instructor, I share my yoga workouts and fitness routines to help you in keep fit.

I believe a body in motion is the healthiest say to live. So, it’s not just about the food you eat but also, the way you move every day.

The Plant-Based Way

What you’ll learn here is that high amounts of protein from animal meat and their by-products can create vulnerability in your body, weakening your immune system and causing it to be unable to battle diseases that can kill.

Here we try to keep it simple. It can be very difficult to cut all meat and dairy foods out, so I like to call it “a mostly-plant-based lifestyle”. Keep everything mostly green, from whole foods, and unprocessed and you’ll Keep Fit!
