Coming up with creative and interesting meals can be tricky. Let’s just say that for most people, plant-based meals aren’t top of mind when it comes to eating something really tasty. But, and that’s a big but, they can be.
I’m a former meat lover turned mostly plant-based eater. Okay, what that really means is that for a number of reasons I have decided to convert my diet to mostly plant-based foods. I don’t really try to specifically label it–in fear that I’ll simply get it wrong. There are vegans, vegetarians, fruitarians, lacto-vegetarians, lacto-ovo vegetarians, flextarians… you get the picture!
Eating plant-based foods feels great but, I admit, it can get boring if you don’t find ways to create delicious meals.
This dish that I am holding is one I love. It’s a slice of toasted spelt bread layered with hummus and topped with arugula, spinach, grilled veggies including red onions, red and yellow peppers, and eggplant. Greek Orzo salad is the side dish. Grape tomatoes make the meal pop with a ultra-satisfying and refreshing taste. Romano cheese is very lightly sprinkled over everything. For added zest, squeeze lemon or lime juice on top and along with some toasted sesame seeds. Ah!
