Fresh Summer Salad

Nothing beats a cool, refreshing salad. And if you add avocado it can be plenty filling.


  • Seasonal greens (chopped into bite-size pieces)
  • 1/2 cucumber
  • Bunch of sliced radishes
  • 1/2 cup of chopped bell pepper
  • Cooked Brown rice
  • 1 sliced avocado
  • Lemon juice
  • Balsamic vinegar (optional)


  • Prepare all ingredients in a salad bowl
  • Serve with some rice crackers
  • Drizzle with lemon juice or balsamic vinegar
