
Fresh Summer Salad
Nothing beats a cool, refreshing salad. And if you add avocado it can be plenty filling.
Ingredients
- Seasonal greens (chopped into bite-size pieces)
- 1/2 cucumber
- Bunch of sliced radishes
- 1/2 cup of chopped bell pepper
- Cooked Brown rice
- 1 sliced avocado
- Lemon juice
- Balsamic vinegar (optional)
Instructions
- Prepare all ingredients in a salad bowl
- Serve with some rice crackers
- Drizzle with lemon juice or balsamic vinegar
