This easy sautéed zucchini recipe is cooked with garlic, olive oil, and a touch of vegan butter for rich flavor. Season with smoked paprika and onion powder, then finish with a sprinkle of truffle salt. This makes a quick and elegant side dish that pairs well with any meal.

Ingredients

  • 1 zucchini (thinly sliced)
  • 1 tablespoon olive oil
  • 1 tablespoon butter (vegan works great)
  • 2 –3 cloves garlic (minced)
  • 1/2 teaspoon smoked paprika (to taste)
  • 1/2 teaspoon onion powder (to taste)
  • Truffle salt (for topping)

Instructions 

  • Heat a skillet over low to medium heat. Add the olive oil, butter, and garlic.
  • Arrange zucchini slices in a single layer in the pan. Cook a few minutes on each side until browned.
  • If you prefer the garlic not to brown, wait until the zucchini is almost done. Push zucchini to the side of the pan, sauté the garlic briefly, then mix it in with the zucchini.
  • Season with smoked paprika and onion powder.
  • Remove from heat and finish with a sprinkle of truffle salt.

Notes

Serve warm as a side dish or topping for pasta, grain bowls, or salads. I love mine with noodles and arugula.
