Heirloom Tomato & Hummus Challah Sandwich

This is one of my favorite lunches. Usually I make it as an open-faced sandwich so that  I don’t get too much bread. I love challah, light, fresh, soft and yummy. After a workout or a good long hike, this meal tastes so good.

The ingredients are simple and fresh. Lightly toast a slice of freshly baked challah. Spread your favorite hummus on top. Sprinkle with toasted pine nuts and paprika. Add chives or cilantro, and salsa.

Halve an avocado, squeeze lemon juice and sprinkle with sesame seeds. On a piece of butter leaf  lettuce place a couple of slices of heirloom tomato and, a slice of fresh buffalo mozzarella in between.

Garnish with some red sweet grapes and radishes…ah!
