I am so excited about this pumpkin seed scramble — it’s honestly fantastic. This whole-food, high-protein alternative to traditional breakfast scrambles delivers an incredible punch of nutrients and tastes absolutely amazing. I’ll be honest: for years, eggs were my go-to breakfast because I wanted protein and didn’t know what else to reach for. Then I moved into tofu scrambles, which I still love, but this version takes everything up a notch.
What is Pumfu?
It’s a plant-based, soy-free protein made from just organic pumpkin seeds and water. Pumfu is even less processed than tofu, completely soy-free, and naturally high in protein. It’s a clean, nutrient-dense, complete plant protein thanks to the amino acid profile of pumpkin seeds. If you’re looking for a delicious, hearty, energizing breakfast that leaves you full and satisfied for hours, this one won’t disappoint — it is fantastic.
What’s the Difference Between Pumfu and Tofu?
Pumfu and tofu may look similar, but they’re made from entirely different whole-food ingredients. Tofu comes from soybeans that are soaked, blended, heated, and curdled with a coagulant. Pumfu is made only from pumpkin seeds and water, which are blended, naturally curdled, and pressed — no soy, no additives, and no coagulants. Pumfu ends up being less processed, soy-free, and richer in minerals like magnesium and zinc, with a naturally higher healthy-fat and protein profile. - 1 package Pumfu
- 1/4 cup vegetable broth
- 1 cup quinoa (cooked)
- 2 cloves garlic (minced)
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- 1 teaspoon thyme
- 1 teaspoon turmeric
- Salt to taste
- Optional: sliced avocado for topping

Instructions
- Heat the olive oil in a skillet over medium heat.
- Crumble the Pumfu into the pan and cook for 2–3 minutes.
- Add the minced garlic and sauté until fragrant.
- Sprinkle in the onion powder, garlic powder, oregano, thyme, turmeric, and salt. Stir to coat the Pumfu evenly with the seasonings.

- Pour in the vegetable broth and stir to combine, allowing the mixture to absorb the liquid and soften slightly.
- Add the cooked quinoa and mix until everything is heated through and well combined.
