Refreshing Strawberry Sorbet

Love summertime because I get to have lunch with my baby? Okay, she’s not a baby anymore…she’s actually almost 15!

So, today I dragged myself away from the computers and Siena and I ate an ultra delicious, ultra healthy plant-based meal. But then we got to the really good stuff!

Strawberry sorbet–soo good! It was the perfect San Diego day for it too. No typical June gloom even just a couple of miles from the beach–toasty warm.

So we grabbed these ingredients and then mixed them up in our HealthMaster (it’s not the Vita-Mix but it does a darn good job–for about half the price)!

Refreshing Strawberry Sorbet

Ingredients

  • 2 cups strawberries (frozen–make them fresh, recipe)
  • 1/2 c Agave nectar or honey
  • Splash of fresh lemon juice
  • Handful of mint leaves

Instructions 

  • Blend all ingredients.
  • Serve immediately or store for later.

Notes

I like to add a little lemon… my daughter prefers it without. You can also use other fruit like raspberries. My idea to freeze them in cupcake holders. We didn’t have any Popsicle  sticks so, it was Siena’s idea to break plastic knives in half! Perfect! Teamwork.
