Here’s the best part–it’s quick to prepare and there’s no cooking involved! What’s in it?
It’s a spinach salad with organic strawberries, blueberries, cherry tomatoes, radishes, onions, red bell pepper, cucumbers, carrots, dried cranberries, even some capers. I top my salad with a dollop of garlic hummus and a sprinkling of pine nuts and some crunchy toasted honey-mustard pretzel bites (just a few), then drizzle some balsamic vinegar over the whole thing. Sometimes I even add a tablespoon of a yummy arrabbiata sauce. I know… sounds weird but the flavors really do go well together.
