This is such a yummy snack and so filling that it's practically a meal itself! For a non-dairy option, fill with hummus or nut cheese, get the recipe here.


  • Eggplant (grilled and sliced)
  • Goat cheese (hummus, or nut cheese)
  • Grilled red bell pepper
  • Juice of lemons


  • Roll all the ingredient into the grilled eggplant
  • Serve immediately
  • Squeeze a little lemon juice on top
