Ingredients

  • Eggplant (grilled and sliced)
  • Goat cheese (hummus, or nut cheese)
  • Grilled red bell pepper
  • Juice of lemons

Instructions 

  • Roll all the ingredient into the grilled eggplant
  • Serve immediately
  • Squeeze a little lemon juice on top
