Toasted Almond Garlic Green Beans

Fresh string beans are delicious and nutritious. The really slender ones can often be found in specialty markets; you can use regular string beans to just don’t use the canned kind.

Ingredients

  • 1 pound fresh string beans (clip and remove the ends)
  • Sea Salt
  • 2 tablespoons olive oil
  • 3-4 garlic cloves (finely chopped)
  • 3 large shallots (diced)
  • Ground pepper to taste
  • Nut Cheese (optional, get the recipe click here)

Instructions 

  • In a large pot of boiling and lightly salted water, blanch string beans for only 1.5 minutes
  • Drain and immerse beans in a bowl of ice water
  • In a saute pan or large pot sauté the shallots with some olive oil and garlic for 5-10 minutes or until lightly browned
  • Drain the string beans and combine with the shallots
  • Season with salt and pepper and toss
  • Heat the mixture to warm the string beans, do not over-cook
  • Serve and top with nut cheese
